Another well known meal in Southeast Asia that uses this kind of soft noodles is called “ pad see ew“. Using this kind of noodles are a MUST if you want to serve this hearty meal like they do in Thai restaurants! However, some versions of rad na use rice vermicelli instead.

The noodles that you should purchase are called “ fresh flat rice noodles” or “ sen yai” and can be found at Asian grocery stores. I’m not sure why, because in my opinion, these fresh rice noodles are definitely not inferior to the thin rice noodles that are found in pad Thai. Unlike pad Thai, which is an extremely popular noodle dish. Rad na (also written rat na, lad na or rad nah) is one of those Thai noodle dishes that are not so easily thought of. But (of course) I always add some crushed dry chili pepper on top of it, to add spice and enhance the flavor. In my opinion, this is one of the best and most unique Thai dishes.

Just make sure it’s tender and cut into bite-sized pieces. But, you can cook it with any meat of your choice another popular option is chicken (rad na gai). The main protein source for this comfort food in Thailand is mostly pork meat (rad na moo). Inside the gravy, you can enjoy the pieces of tender pork meat that’s drenched in Thai flavors. For meats sauteé in minimal oil to brown on all sides and cook about 70% through.Rad na is a tasty noodle dish made with wide flat rice noodles and a soup-like gravy. The calories in rad na come more from the noodles than the meat and vegetables or seafood used. In this noodle dish the wide rice noodles are stir fried initially, leading some people to refer to the dish as pad (fried) rad na but it should be noted that although the dish contains an element of stir frying it is more of a braised in gravy noodles style dish. You need fresh rice noodles for this dish to be authentic although dried noodles that are cooked will work if you can find good quality dried wide and flat rice noodles. Your Flat and wide rice noodles should look like this when finished.
